Erin from Birch House Bakery
Hi, I'm Erin and I'm the Cake Designer and Maker here at Birch House Bakery. I started my business in 2016 after deciding to ditch the commute to London to stay at home to look after my son Henry.
I live in Balcombe, a small pretty village in West Sussex just south of Gatwick, and now have two boys under nine (Henry & Oscar) who keep me busy alongside the business.
I come from a family of keen bakers and with a background in Art and Design / Fashion I have been able to grow a business which combines both my creativity and passion for baking.
My design style is contemporary, elegant and stylish. I love to use both fresh and dried florals on cakes as well as structural techniques with wafer and rice paper. And it goes without saying that a cake should taste as good as it looks!
I absolutely love knowing that cake brings families and friends together in celebration; whether it be the one perfect centrepiece for your wedding day or 50 years later for your anniversary.
I'm also trained in French macaron making so you'll see these frequently appear in my cake design. Knowing how tricky these can be to master I also offer macaron making classes from the comfort of my country kitchen.
Outside of baking I am a super keen gardener, and with a quarter of an acre I spend a lot of time planning and planting in my garden. I love roses, peonies and dahlia and have recently changed my veg patch into a cutting garden to grow more varieties. Here's hoping to use some organic fresh florals on 2022 cakes!
